Dahi Bara, yogurt and fritters

Baingan ka Bharta, seasoned roast eggplant, is a healthy dish – eggplant, the main ingredient, is low in fat and sodium and high in dietary fiber, vitamins C and B6, magnesium, phosphorus and potassium. Add to that the tomatoes, green chilies and onion …  a mighty nutritional punch in one single dish!

Biryani: a family of South Asian dishes made from a mixture of spices, rice, meat/vegetables and yogurt. It was spread throughout the Middle East and South Asia by Muslim travelers and merchants, and is very popular in India, Pakistan and Bangladesh. The name is derived from the Persian word beryā(n)  which means “fried” or “roasted”. There are many kinds of biryanis and each kind has uniqueness about it.

Raita is a condiment based on yogurt and used as a sauce or dip, seasoned with cilantro, cumin, mint and other herbs and spices. Vegetables such as cucumber and onions are mixed in. The mixture is served chilled.  Raita has a cooling effect on the palate which makes it a good foil for spicy Indian dishes.

Kulfi is a flavored frozen dessert made with milk. It is a kind of ice cream that comes in various flavors, however, ours is the traditional, delicious kulfi flavored only with Rose Water.  Unlike western ice creams, kulfi is not whipped; it is a solid, dense frozen dessert. Therefore, kulfi is a different kind of an ice cream.
