Bafat
is a type of masala, a mixture of spices. It is commonly made with a mixture of
dried and ground chili peppers, coriander seeds, cumin seeds, mustards seeds,
black peppercorns, turmeric, cinnamon and cloves. Pork is a sparingly consumed
delicacy in India. For cultural and spiritual reasons, several communities in
India don’t really eat pork. Indians consume pork in the form of processed
bacon, cocktail sausages and salami – usually breakfast food.
However, there are
a few states which are known to relish pork and have traditional dishes. These
include pork vindaloo from Goa, pork
momos and dumplings from Sikkim, and
Pork bafat from Mangalore. Due to the
Portuguese influence in the area, it is a combination of Indian and Portuguese
flavors. Bafat is regarded as a pork
seasoning, but is also used to season other meats, and sometimes vegetables.
Chana Masala,
also known as chole masala or channay is a popular Punjabi dish in
Indian and Pakistani cuisines. The main
ingredient is chickpeas, called chana. Along with chickpeas, the ingredients
typically include onion, chopped tomatoes, coriander seed, garlic, chilies,
ginger, dried mango powder, crushed pomegranate seed and garam masala.
